These quesadillas are a fun twist to a classic. Using beans, veggies, sweet potatoes, and a minimal amount of cheese these quesadillas hit the spot and ensure you are getting more than just cheese and a tortilla! To me, more nutritious means more delicious.
Sweet Potato Quesadilla

- Flour tortillas or gluten free if needed
- 1 medium sweet potato
- 1 (15 oz) can black refried beans
- 1 T. oil
- ½ small onion - diced
- ½ red bell pepper- diced
- ½ yellow bell pepper- diced
- 2 C. grated cheese of your choice
- Sour cream, salsa, guacamole
Instructions
Pearce sweet potato with fork multiple times.
Microwave for 3-4 minutes or until tender.
Remove skin and mash.
Sauté onion and bell pepper in oil until softened.
Heat refried beans until warm.
To assemble quesadillas: spread a layer of black beans on bottom tortilla, add a layer of mashed sweet potato, sprinkle bell pepper and onion for the next layer, top with cheese and top tortilla.
Heat quesadilla in skillet until slightly browned, flip and cook other side until browned.
Top with sour cream, salsa, and guacamole.
