During my busy work week I usually make something with eggs for breakfast. There are so many yummy ways to make them and switch it up but somehow I still can get sick of them by the the end of the week. When I get to the weekends and can take my time in the morning I love making different recipes. It makes the weekends feel even more special to me. These sweet potato pancakes were the recipe for this weekend.
These fluffy, warm, cinnamon pancakes are the perfect addition to a lazy morning at home.
I will definitely be making them more often especially as fall approaches and I’m craving all things cinnamon.

Sweet Potato Pancakes

- 1 small sweet potato
- 2 eggs
- ½ tsp cinnamon
- 1 tsp vanilla
Instructions
Pearce sweet potato with fork multiple times
Microwave for 3 minutes or until tender
Remove skin and place in blender
Blend until smooth
Add remaining ingredients and blend
Pour into skillet and lightly brown each side
Top with pecans and syrup
Notes
Be patient while these cook, they take slightly longer than a normal pancake. If you try to flip them too soon they will fall apart.
