Simple Granola

Happy New Year friends! Are you one of the “resolution-ers” out there? I’m not, but I am definitely a goal setter. Each year my husband and I sit down and create a goal list for the new year. This year some of our goals include trying new recipes each week and continuing to eat as healthy as possible. I think one of the easiest ways to eat healthy is to eat simply. This simple granola recipe includes only 7 ingredients- but that’s all it needs because it’s absolutely delicious. Sometimes simple really is best.

One of my other goals is to do more meal prep ahead of time to save me stress during the week when my schedule is packed. This simple granola is going to be one of my go to prep items for breakfasts and snacks. I will make a batch of this on the weekend and Michael and I can eat it for the next week or two.

Here are some suggested ways to enjoy this yummy granola:

– Sprinkle over greek yogurt

– Eat with milk- like a bowl of cereal

– Top a smoothie or acai bowl with it

– Make a snack mix by adding chocolate chips, nuts, and/or dried fruit

– Make a yummy apple snack by slicing apples, topping with peanut butter and sprinkling with granola

– Simply eat it straight out of the jar

Simple Granola

Serves: 12 Prep Time: 5 minutes Cooking Time: 30 minutes

Ingredients

  • 3 C old fashion oats, gluten free
  • 1 C slivered almonds
  • 2 tsp cinnamon
  • ¼ tsp salt
  • ¼ C coconut oil, melted
  • ½ C maple syrup or honey
  • 1 tsp vanilla

Instructions

Mix together dry ingredients.

In small bowl mix together coconut oil and syrup or honey. Heat in microwave for 20-30 seconds. Whisk in vanilla.

Pour wet mixture over dry ingredients. Toss until well coated.

Bake at 350 degrees for 30 minutes (stirring half way through).

Let granola cool fully, allowing it to crisp up a bit.

Enjoy on top of greek yogurt, with milk, or simply by itself.
