Are you hosting Mother’s Day brunch this weekend? These quick ‘n easy waffles are the perfect item to make for your mom. You simply throw all the ingredients into and blender and then cook in a waffle iron- what could be easier?
If you want to really impress mom you can set up a waffle bar! Make the waffles right before your guests arrive. Keep them warm by placing in the oven at 200 degrees. Next, create a bar full of goodies for your guests to personalize their waffle with. Some of my favorite toppings are chocolate chips, walnuts, pecans, blueberries, strawberries, bananas, Nutella, peanut butter, whipped cream, sprinkles, and syrup.
Your mom will love all the effort that went into you making brunch, you don’t have to tell her how incredibly quick ‘n easy they actually were to make;)
But these waffles aren’t just for special occasions. They are perfect for a weekday breakfast too. You can easily make these waffles ahead of time and keep in the fridge or freezer until you are ready to eat them. Reheat them by placing in the toaster. When I prep these ahead of time I usually make a few plain, a few chocolate chip and a few blueberry. I label ziplock bags with each flavor and then toss them into the freezer. I like to break up the waffles into their smaller sections when I prep these because then I can mix and match flavors.

Gluten Free Waffles

- 1 ½ C. gluten free oats
- ¼ C. corn starch
- 2 T. ground flax seed
- 1 ½ tsp. baking powder
- ¼ tsp. salt
- ¼ tsp. cinnamon
- ½ C. plain Greek yogurt
- 1 T. honey
- ¼ C. milk or almond milk
- 2 eggs
- 1 T. olive oil
- 1 tsp. vanilla
- Optional Mix-ins: chocolate chips, nuts, blueberries
Instructions
Place all ingredients into blender. Blend until fully combined and smooth.
Scoop mixture into your pre-heated waffle iron. Cook until golden and slightly crisp.
