I personally think this whole pumpkin craze has gotten a little out of hand. Pumpkin cheerios and now pumpkin spam? Really? When it comes to pumpkin, I am a total purist. I don’t like anything that is artificial pumpkin flavor… but I loveeeee true pumpkin items made with REAL pumpkin. My Pumpkin Granola is made with real pumpkin so it’s on my fall favorites list.
This recipe is comprised of 13 simple and wholesome ingredients:
Old fashion oats
Pecan pieces
Raw pepitas
Salt
Cinnamon
Ground ginger
Ground nutmeg
Ground cloves
Coconut oil
Maple syrup
Pumpkin puree
Brown sugar
Vanilla extract
I make this granola in the same way I do any basic granola recipe.
Start by preheating your oven to 325 degrees. You want to bake granola at a lower temperature so that it cooks slowly and crisps up.
Then mix together all the dry ingredients in a large bowl.
Next mix together the wet ingredients in a smaller bowl.
Pour the wet ingredients over the dry ingredients and mix well. Here you want all the oats to be coated in liquid.
Once they are all coated, pour onto a baking sheet. I always line my baking sheets with parchment paper to make clean up easier.
Bake for 35-40 minutes, making sure to stir half way through.
This pumpkin granola will continue to crisp up after it is done baking so do not over bake it or the pecans will burn.
Let your granola cool for 20-30 minutes before putting it in an air-tight storage container.
My favorite way to enjoy this delicious granola is to mix together a little maple syrup with plain Greek yogurt and sprinkle granola on top. It is the best snack or breakfast to get you into the fall spirit!

- 3 C. old fashion oats
- 1 C. pecan pieces
- 1/3 C. raw pepitas
- ¼ tsp salt
- 1 ½ tsp cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ C coconut oil, melted
- 1/3 C maple syrup
- 1/3 C pumpkin puree
- 2 T brown sugar
- 1 tsp vanilla extract
Instructions
Preheat oven to 325 degrees.
In a large bowl combine oats, pecans, pepitas, and spices. Stir to combine
In a small bowl whisk together melted coconut oil, syrup, pumpkin, brown sugar and vanilla.
Pour liquid mixture over dry mixture and stir to coat.
Place on a parchment lined baking sheet. Bake for 35-40 minutes, stirring once half way through.
Notes
Granola will continue to get crisp as it cools so don’t over cook.
