This super easy peppermint bark recipe is the perfect way to get into the Christmas spirit. This was the very first thing I made this year- in fact I made it on December 1st to really ring in the Christmas season.
Christmas is my absolute favorite holiday. Just like the song says, “It’s the most wonderful time of year.” I believe this to be completely true. All year I wait for the Christmas season to start. So the day after Thanksgiving I start blasting Christmas music throughout my house and in the car. I get my Christmas decor up as soon as I possible can. And I start planning all the holiday goodies that I am going to make during the next month. This year the first recipe just had to be peppermint bark.
This peppermint bark is delicious to enjoy yourself, but I love it best shared with others. I make a big batch of this stuff and then give it away to friends and family as little holiday gifts. I of course also keep a small stash in my own fridge for Michael and I to enjoy. This recipe is great because it appeals to the dark chocolate and white chocolate lovers. I love mixing the two chocolates for the great flavor combination but also because the contrasting colors makes it look extra pretty. (I’m all about the presentation and the flavor).

Peppermint Bark

- 24 oz dark chocolate chips
- 24 oz white chocolate chips
- 2 tsp coconut oil, divided
- 2 tsp peppermint extract
- 6 candy canes, crushed into pieces
Instructions
Line 1 or 2 (depending on how thick you like your bark) large baking sheets with parchment paper or foil.
Place dark chocolate chips and 1 tsp of coconut oil into a microwave safe bowl. Microwave in 30 second increments until chocolate is fully melted. Stirring between each increment.
Add peppermint extract to melted dark chocolate. Stir until fully combined.
Carefully spread melted dark chocolate onto lined baking sheet. Spread as thin as you would like.
Place baking sheet in fridge to harden while you complete next step.
Melt white chocolate chips and remaining tsp of coconut oil in microwave in the same way you melted the dark chocolate.
Remove baking sheet from fridge and spread melted white chocolate on top of the hardened dark chocolate.
Sprinkle crushed candy canes over the white chocolate.
Place baking sheet back in the fridge for 5-10 minutes so chocolate hardens.
Break into pieces and enjoy!
