I decided to name these bars “Mix It Up Bars” because every time I make them they turn out different based on the ingredients I choose to use. I always just use what I have on hand so they are constantly changing but always delicious. I really don’t think there’s a bad combination out there.
For my latest batch, I used cashew butter, dried cherries, peanuts, cashews, pumpkin seeds, sunflower seeds, coconut, and cacao bits as my mix-ins.
These are so addicting that sometimes I wake up craving them so I’ve even broken up the bar and used it as a granola over greek yogurt for my breakfast.

Mixed Nut Granola Bars

- 4 C unsweetened puffed brown rice
- 1 C old fashion oats
- 2 C dried fruit/seeds/nuts/coconut
- 1/3 C brown sugar
- 1/3 C honey
- 4 T butter
- ½ tsp salt
- 1/3 C creamy nut butter
- 1 tsp vanilla
- ½ C dark chocolate chunks (optional)
Instructions
Mix puffed rice, oats, fruit/seeds/nuts/coconut in a large bowl and set aside.
Add brown sugar, honey, butter, salt to a small pan on the stove- bring to a boil. Let boil for one minute, stirring frequently. Remove from heat.
Add nut butter and vanilla to the wet mixture- stir until well combined.
Pour wet mixture over dry mixture and stir well. Once well mixed and slightly cooled, stir in chocolate chunks.
Press into a greased 9x13 pan. Refrigerate for at least 1 hour before serving.
