These Cottage Cheese Pancakes are AMAZING! My husband, Michael, and I are so obsessed with these pancakes that we make them every single weekend… I’m not even kidding. They are the highlight of our Saturday or Sunday mornings. We have a whole routine with them now. When we get out of bed and go downstairs, I immediately get out the ingredients and the blender. While I do that, Michael gets out the skillets- yes we use 2 at a time so all the pancakes can be ready sooner (Can you tell we are so impatient?). I then start cooking up the pancakes and Michael makes us our coffee and sets the table. It is the perfect weekend routine for us. After all, who doesn’t want to start off their day with a delicious and healthy breakfast?
These cottage cheese pancakes are so light and fluffy yet packed with protein and low in calories. There are 48 grams of protein and only 610 calories in a whole batch of these guys!! That’s only about 40 calories per pancake!* This recipe will give you the feeling of indulgence without the added sugar or calories. I am all about finding healthier ways to enjoy our favorite food items.
I am definitely a “chocoholic” so I love adding some chocolate chips to these pancakes as well. Usually Michael and I make half the batch with chocolate chips and half plain. We always do a vote of the day for which we liked better that morning. We almost always vote for the chocolate chip ones but occasionally we pick the purity of the plain ones. Regardless these are delicious!

Cottage Cheese Pancakes

- 1 C. low fat cottage cheese
- 3 eggs
- 1 tsp vanilla
- 1/2 C. gluten free flour
- 1 tsp baking powder
- pinch of salt
Instructions
1. Place all ingredients in a blender or food processor. Blend until smooth.
2. Cook on a large skillet or in a sauté pan until pancakes start to bubble. Flip pancakes and cook for another minute or two, until both sides are golden. (Avoid flipping too early or they will ooze all over the pan.)
3. Top with maple syrup.
