Bruschetta

Bruschetta, Bruschetta, Bruschetta! The word alone is fun to say but it’s even more delicious to eat. And I’m not talking the bruschetta mixture that comes from a can or jar at the grocery store. I’m talking fresh tomatoes mixed with fresh basil tossed with garlic and parmesan cheese on top of a crispy piece of bread. Can you say yum? My mouth is watering as I write this.

There is something so incredible about eating a dish that is so simple yet so amazing due to using wholesome, flavorful ingredients. This is one of those dishes. It includes only 6 simple ingredients but they blend together so nicely to create the perfect appetizer. And who doesn’t love a good appetizer?

We all know what it is like to be starving before dinner and feel impatient while we wait for the meal to cook. This bruschetta is the perfect thing to whip up while you wait for your dinner to finish cooking. Your dinner guests will be so glad to have this to keep their tummies happy as you mingle.

I have even had multiple people who claim to hate tomatoes eat this recipe and say that they actually enjoyed it. So I encourage you to give this easy recipe a try next time you’re having company over or make it for yourself, I promise you will be glad you did.

Bruschetta

Serves: 4 servings Prep Time: 5 minutes Cooking Time: 1 minute

Ingredients

  • 2 c. fresh tomatoes- diced (I prefer cherry or Roma)
  • 1/4 c. fresh basil- diced
  • 1/4 c. parmesan cheese
  • 1 tsp. mined garlic
  • French baguette or gluten free bread
  • olive oil

Instructions

Diced tomatoes and place in bowl.

Add chopped basil, parmesan and garlic to bowl.

Toss together and set aside to marinate for a few minutes.

Slice bread and brush with olive oil, place on baking sheet.

Broil in oven for 1 minute- watch very closely as the bread can burn easily.

Top each piece of toast with a generous scoop of bruschetta mixture.
