This taco salad recipe has been a family favorite for years and years. In fact in elementary school this was the recipe I submitted for our school cookbook. I loved (and still love) it so much that this is what I requested every year on my birthday. Most kids would probably request chicken nuggets or mac n cheese, but not me. Maybe this was an early sign of my passion for health and nutrition;)
Anyway… don’t let all the ingredients in this taco salad intimidate you, they are all simple ingredients and this recipe comes together easily.
I like this salad best as an entree, but it can, of course, also be served as a side.
Best Ever Taco Salad

- ¼ C. vinegar
- 3 T. honey
- 1 ½ tsp cumin
- ½ tsp pepper
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 4 green onions, chopped
- 2 roma tomatoes, diced
- ½ green bell pepper, diced
- ½ red bell pepper, diced
- 1 lb lean ground beef
- 1 packet taco seasoning
- ½ C water
- 1 C. thousand island dressing
- ¼ C salsa
- ½ tsp chili powder
- ½ tsp rice vinegar
- Chips
- Lettuce
- Cheese
Instructions
Mix first 4 ingredients. Add beans, corn, green onions, tomatoes, and bell pepper. Refrigerate until serving.
Brown ground beef in skillet- drain drippings. Add taco seasoning and water- simmer and stir until beef is well coated and water is absorbed.
In a separate bowl mix together thousand island, salsa, chili powder and rice vinegar.
To build salad- layer lettuce, vegetable mix, ground beef and cheese, top with dressing and serve over broken tortilla chips.
