I first came up with this recipe in high school while working as a cook at summer camp. I was making pancakes for all the campers and counselors wishing so bad that I could have one, but sadly they weren’t gluten free. At camp we didn’t have access to any fancy gluten free products so I had to be creative with the simple ingredients we did have. I found bananas, eggs, oats, and chocolate chips and whipped up these pancakes.
Banana Oat Pancakes

- 1 egg
- 1 banana, mashed
- 2/3 C. oats
- chocolate chips (optional)
Instructions
Mash banana
Stir in egg and oats
Mix in chocolate chips if desired
Cook on skillet until both sides are slightly browned
Remove from heat and let stand for a few minutes to allow pancakes firm up a bit
Serve with peanut butter and syrup
Notes
These pancakes reheat super well so they're a great make-ahead breakfast that can be heated up on your way out the door. They are so yummy they don't even need syrup if you're on the go.
