Banana Breakfast Cookies

- 3 ripe bananas
- 1 egg
- ¼ C. almond milk
- ½ C. unsweetened applesauce
- 1 tsp vanilla
- 1 tsp cinnamon
- ¼ tsp salt
- 2 C. old fashion oats
- 2 T. flax seed
- ½ C. chopped walnuts
- ½ C. chocolate chips
Instructions
Mash bananas and mix with egg, almond milk, applesauce, and vanilla.
Stir in cinnamon, salt, oats, and flax seed. Mix until well combined.
Fold in walnuts and chocolate chips.
Line baking sheet with parchment paper or spray with non-stick spray. Make small mounds at least 1 inch apart. I like my cookies to be approximately 2-3 inch circles.
Bake at 350 for 20 minutes.
Notes
These cookies keep best if refrigerated. However, they are especially delicious when eaten warm. I like to microwave mine for 10-20 seconds before enjoying them.
