Avocado Toast

Do you love brunch as much as I do? This gluten free avocado toast is the perfect brunch item to add to your list. It is so incredibly easy to throw together and tastes delicious every single time.

I mean who doesn’t love a perfectly ripe avocado? In my opinion, almost anything can be made better by adding avocado to it. I love avocados so much that I even went to an avocado festival. Yes this is a real thing! The one I went to was in Carpinteria, California. It was a ton of fun. This specific festival is known for having the worlds largest vat of guacamole. As you can imagine, it was ginormous! They had everything you could possibly imagine- avocado ice cream, avocado popcorn, avocado infused olive oil, etc. I tried it all and loved everything. Now every time I make avocado toast I think back to the fun time I had at the avocado festival.

This time I used gluten free toast, mashed avocado, alfalfa sprouts, diced tomatoes, fried eggs, and red pepper flakes. It was exactly what I had been craving. I love how flavorful and filling avocado toast is.

Here are a some other delicious ways to enjoy your avocado toast:
– Add bacon
– Drizzle with balsamic vinegar or balsamic reduction
– Top with arugula or spinach
– Add Prosciutto
– Use scrambled eggs or hard boiled eggs instead of fried eggs
– Top with salsa or hot sauce
– Add veggies- diced cucumber, red onion, bell pepper, etc.

There are countless ways to spice up this basic brunch item. I don’t know about you but I tend to get sick of eating the same thing over and over again so I absolutely love when I find a recipe like this one where I can have the same base but constantly switch up the flavors and textures.

Avocado Toast

Serves: 4 servings Prep Time: 5 minutes

Ingredients

  • 4 pieces of bread, I use gluten free
  • Butter
  • 1-2 ripe avocados
  • 1 small package alfalfa sprouts
  • 1/2 C. tomatoes, diced. I used cherry tomatoes.
  • 4 eggs
  • Red pepper flakes

Instructions

In a sauté pan, fry eggs to your desired doneness.

While eggs are cooking, toast bread in a toaster or in the oven. Once toasted, spread butter on each piece of toast.

Mash avocado and place on top of toast.

Place alfalfa sprouts and tomatoes on top of mashed avocado.

Top with fried egg and sprinkle with red pepper flakes.
