Soft Chicken Tacos with Jalapeño Cilantro Lime Slaw

I’m always looking for new week night meals to make. Every weekend when I’m planning our meals for the week I ask my husband if there’s anything he’s been craving or wanting me to make. He is the most easy-going guy on the planet so usually he says something like, “I’m great with whatever you want to try this week”. But, this weekend when I asked him he actually requested something! Soft chicken tacos. Such a simple request but I was thrilled! I love when he makes meal requests because, of course, I want to make him happy but it also inspires to me to try new recipes.

This is the recipe I came up with to satisfy his request. The result…. we both loved it!

I loved it so much that after having one serving and feeling stuffed, I still went back for another delicious chicken taco. I ended up only being able to eat one bite of it before passing it to Michael to finish for me.

My next plan to try this recipe with beef instead of chicken… I think it would be equally as delicious… Madelicious

Soft Chicken Tacos with Jalapeño Cilantro Lime Slaw

Ingredients

  • Soft corn tortillas
  • 2-3 chicken breasts, diced
  • 2 T olive oil
  • 1 tsp minced garlic
  • 2 tsp cumin
  • 2 tsp chili powder
  • ¼ tsp cayenne
  • 1 can black beans
  • Creama:
  • ½ large avocado (or 1 small avocado)
  • ½ C low fat sour cream
  • 2 tsp lime juice
  • ¼ tsp salt
  • Slaw:
  • 2 C bagged coleslaw mix
  • 1/3 C tomatoes, diced
  • ¼ C red onion, diced
  • ½ bunch of cilantro, diced
  • 1 jalapeño, seeds removed and diced
  • 3 T fresh lime juice
  • 1 T olive oil
  • 2 T honey

Instructions

In a skillet, cook chicken in olive oil until no longer pink. Turn heat to low and add garlic, cumin, chili powder, and cayenne. Stir until all pieces of chicken are well coated in spices.

In a small saucepan, heat black beans until warmed through.

To make creama: mash avocado, mix with sour cream, lime juice and salt.

To make slaw: in small bowl whisk together lime juice, olive oil, and honey. In a medium bowl mix together coleslaw mix, tomatoes, red onion, cilantro, and jalapeño. Pour wet mixture over coleslaw mix and toss until well coated.

Soften corn tortillas by placing a small drop of olive oil in a skillet and heating tortillas until starting to slightly brown.

Build tacos by layering creama, beans, and chicken on tortilla, top with coleslaw.

Notes

*When I make this recipe I make the coleslaw first so it can have some time to marinate in all the yummy flavors.
