If you’ve been over to my house for dinner I’ve probably made you this Creamy Tomato and Spinach Pasta. It is always a crowd pleaser so I make it a lot. It’s full of flavor but fairly mild so it’s a good one to make if you are unsure of someone’s food preferences.
I love that this recipe is slightly creamy but won’t sit too heavy in your company’s stomach.

Creamy Tomato and Spinach Pasta

- 1 box gluten free penne pasta
- 2 large chicken breasts
- 1 small onion
- 2 garlic gloves
- 1 T. olive oil
- 1 (14.5 oz) can petite diced tomatoes
- 2 tsp dried basil
- 2 tsp dried oregano
- 1 tsp red pepper flakes
- 2 T. tomato paste
- 1/2 C. water
- 1/4 C. cream
- 1/2 bag spinach
- Parmesan cheese
Instructions
Cook pasta according to package directions.
Dice up chicken breast and cook in a skillet until no longer pink.
Remove chicken and set aside.
Sauté onion and garlic in olive oil until transparent.
Add diced tomatoes and spices. Stir together.
Add tomato paste and water. Cook until the tomato sauce is dissolved into sauce.
Stir in cream.
Add chicken and spinach, cover and simmer until spinach is wilted.
Serve sauce over pasta and top with Parmesan.
